Veronica began her hospitality career at sixteen as a host in a highly detail-driven restaurant, where the care and intention shown to every guest sparked a lifelong passion for service. Encouraged by one of the restaurant’s managing partners, she went on to study Hospitality Management at Roosevelt University, concentrating in Food & Beverage and Meetings & Events, with a minor in Marketing.
Her career spans both intimate, chef-driven concepts and high-volume dining rooms. Veronica worked as a server at S.K.Y., helped reopen Parachute, and later served as Service Director for Valhalla, an intimate tasting-menu restaurant recognized by Chicago Magazine, the Jean Banchet Awards, The Infatuation, and Condé Nast. She then joined Swift & Sons as Service Manager, overseeing hospitality operations with a focus on the guest arrival experience.
Veronica joined PERILLA for its chef-driven ethos and alignment around thoughtful hospitality. She believes the most memorable dining experiences come from a curation of personalized details—and from growing teams that are empowered to care deeply for every guest they serve.
