Born and raised in Chicago, Oscar is a proud descendant of Michoacán, Mexico, and brings that heritage-driven work ethic into every kitchen he steps into. He spent over a decade honing his craft on the line at some of Chicago’s most respected restaurants, including La Sardine, Obélix, Three Aces, and The Purple Pig. Through consistency, grit, and a deep respect for the process, Oscar steadily worked his way up the ranks, ultimately earning his role as Sous Chef.

At PERILLA Steakhouse, Oscar is the first line cook to rise through the kitchen ranks internally—a testament to both his skill and his leadership. Over the past year, he’s continued to grow alongside the team, helping shape the kitchen with calm focus, reliability, and an unwavering commitment to excellence.
