Born and raised in Buffalo Grove, Illinois, Chef Mark began his career not in the kitchen, but in the classroom. After earning his degree in Education from the University of Missouri, he spent three years as a Special Education teacher in Wheeling, IL.
Driven by a lifelong love of food and curiosity for craft, Mark transitioned into the culinary world, training under some of Chicago’s most respected chefs. He began as a Line Cook at St. Clair Supper Club and later joined Roister, both under Chef Adair. He continued to refine his skills at Next under Chef Alan Mileykovsky before joining PERILLA Steakhouse as a line cook.
At PERILLA, Mark’s dedication and drive quickly earned him a promotion to Chef Tournant and later Jr. Sous Chef, where his commitment to growth and collaboration continues to define his approach in the kitchen.
