Born and raised in sunny San Diego (San Ysidro, to be exact), Jose Vivas brings a people-first approach to hospitality. Restaurant-trained and experienced across nearly every role, he’s known for his ability to connect with guests and make them feel instantly at home.
Jose was drawn to PERILLA Steakhouse through his lifelong love of Korean cuisine and the brand’s ethos of thoughtful, genuine hospitality. His philosophy is simple: every great guest experience should end with a goodbye to a new friend.
Outside the dining room, you’ll find Jose watching movies or working through a jigsaw puzzle—bringing the same focus and care he’s known for on the floor.
