David Se-oong Weinstock was born in Anyang-si, Gyeonggi-do, and adopted to the States at a very young age. A veteran of many concepts, he's spent time in everything from burger bars to the kitchens of 10 different Michelin-starred restaurants in Chicago and abroad.
His culinary journey started as a server at Steak n Shake in Cincinnati, but he realized his passion was in the back of house. Chef David worked at Kuma's Corner and Urban Belly before taking a step away from management to refine his skills in the world of fine dining. Chef David went on to work at the Michelin-starred Band of Bohemia and North Pond before moving to Singapore where he spent time in the acclaimed kitchens of Labyrinth and Alma. His time working in Singapore's Michelin scene was instrumental in shaping his culinary ethos, learning how a truly unique Asian cuisine can intertwine and reconcile with what's globally known as fine dining.
Although slated to become a chef for Indonesia's Good Food Brotherhood the pandemic brought him back stateside where he relocated to Denver where he was part of the management team for Denver's Big Red F restaurant group. Since returning to Chicago in 2023 Chef David has been with Perilla, becoming the CDC of Perilla Fare and now at Perilla Steak.
